Easy and fool-proof recipe for Gazpacho.
Gazpacho is cold soup that mainly consists of mixed raw vegetables. It therefore offers a multitude of fibres, vitamins and minerals. And it is quick and easy to make. It only takes 15 mins and the only tools that you need are a knife and a blender or a mixer. This recipe serves 4 people.
1kg ripe tomatoes (no need to peel them)
150g of cucumber (preferentially peeled)
150g of red pepper (take out the seeds)
100g of watermelon (take out the seeds and use the interior)
1 bulb of fresh garlic
50ml of extra virgin olive oil
½ teaspoon of salt
Ground black pepper
Cut everything into pieces and put it all into the blender. Mix for about 3 mins and check the consistency. It should be like a thick soup. If too liquid, then proceed with 1-2 mins more mixing. Adjust with salt and pepper according to taste. Can be served with freshly toasted bread.
Tip: to make the Gazpacho more liquid, only use more (100g) watermelon. To make it more appealing to kids, add some freshly squeezed orange juice. To add a refreshing twist, add 1-2 tsp vinegar or freshly squeezed lemon juice. Enjoy your soup!
